Would a differential from an 87 fit in an 89, trying to go from 2:59 to 3:07, will be differential to differential swap.
In short yes it will work. BUT!!! To be a direct bolt in they would both have to be the same type of differential. Both either a Dana 36 or 44. You can go from a 36 to a 44 but you will need a shorter driveshaft and you will need some slight modification to your C beam. Also with the gear ratio change your speedometer will be off. You can correct that with a VSS plastic gear change or just get an adjustable converter box.
If the 3.07 is another D36 there's very few issues. Very few! If the 3.07 is a D44 then there's sufficient issues that it might be more practical to shop for a D36 - 3.07.
Rethink and confirm what the 3.07 is. If you're unsure post a snapshot or two of the 3.07 to be ID'd.

You want to avoid anything that mentions it's from an '84 unless you remove the cover and can confirm it's had the later internals added to it to make it as reliable as the '85 - '96 D36 3.07.

Just out of curiosity what was different with an 84? I know all 84's use a Dana 36 but it didn't know they were different.
I did this on my 86. Swapped in a 3.07 from a 92 that I picked up from a forum member. The differential swap was straight-forward. Actually, the most difficult part was locating and getting my hands on the correct speed sensor for the 700r4 to compensate for the new gearing (and make sure the speedo, etc worked correctly). If I recall, the sender I located was about $90 when I found one.
