what sensors should i replace? i am dropping in a rebuilt engine for a 95 corvette.

I am of the mind that you do not replace sensors that are working.
Also solid-state electronics generally have a constant failure rate and mean time between failure regardless of age. They do not degrade gracefully over time. The electronics in an old sensor that have not failed yet are likely to last as long as a brand new sensor of the same quality. If the older sensor is of higher quality the electronics will likely last longer than a brand new one.
Everything that's on the engine and/or hard to get to after the engine is installed. Use ACDelco or Standard Motor Products parts and you'll be very happy.
