The headbolts thread into the block's water passages. With out thread sealant, when the cooling system is under pressure, coolant will leak around the threads and into the combustion chamber and oil system. Not good.
There are a number sealants to use. I got mine from a local auto parts shop (NAPA). Any non-hardening pipe sealant with Teflon will work. You need to make sure you don't throw off the headbolt torque with the wrong type of sealant. It should be with Teflon.
