Oil Temperature question:

I think you should do a couple things:
1. Remove the radiator shroud, and clean in between the condensor and radiator. Its going to be fully blocked up in there if your temps are this high.
2. Drain and flush out the radiator, and refill. Maybe add a bottle of Water Wetter.
3. Change the thermostat to 160 or 180. In AZ, id definitely use a 160. (stock is 195). At any rate, you should replace it.
4. If you want a permanent fix, wire in a fan switch to the main fan to make it come on sooner. Either that or have someone burn you a chip to make them come on sooner. (DO NOT buy a hypertech chip).
I'm also worried that your Water Pump may not be doing the job, take a close look at its weephole. But its probably because of the blockage in the radiator shroud.
I wouldnt worry so much about oil temperature if youre running Mobil 1 synthetic, but with regular dino oil Id be uncomfortable, it breaks down at those temperatures.
I just recently changed my water pump gasket, lower radiator hose, through in a 160 t- stat, and put in a 60/40 mixture of ethylene gylcol and water.
now my coolant temps hover around 180-190 on the highway.. it's just my oil temp that I'm worried about. On the bottle of castrol it says it's good for up to 400 degrees.. hmm.. i kinda doubt it..
EDIT: I just cleared out my shroud area recently and found newspapers.. tumbleweeds etc

Id add the fan switch right away.
