Default torque converter question

I am in the final steps of my winter project. In the last month I pulled the motor and stroked it to a 383 (all forged 4340, compression at 10.5:1) . I bought the 210 afr heads, lpe headers, zz9 cam, mini ram II, jacobs ingnition system, sfi fluid balancer, transgo shift kit, dana 44 3.54, and nos spray 75-125hp. I just need to know a little more on the torque converter? any Ideas on what stall speed I should choose? this is going to be a street/strip car.
I would also like any suggestions on brand names, and if anyone can tell me the difference between lock-up and non-lock up?
I would also like to thank the members of this forum that have answered my question either by posting the same questions I had or directly answered questions I posted. You all have been alot of help. thank you

with a small motor like a 383 and the big 210 heads and mini ram intake which has no low end also i would recomend at least a 4000 stall probally to be better matched i would use a 4500 stll converter anything less than 4000 its going to feel pretty doggy down low
for example me and ski have 406s with 190 heads and a super ram and still run a 3600-3800 stall with all that botttem end come to think of it maybe a 5000 stall would be perfect for you
