However when you start it up, even cold, the level can drop to below the sensor. One of the reasons, IMHO, it will go off as the engine heats up is that the heated coolant expands.
Two suggestions: as someonelse said, burp it! I believe your model has a shrader valve in or around the thermo housing for this purpose; and check the radiator cap, if it is old, discard it for new. A worn seal can allow expanded coolant to go to the overflow and allow air, not coolant, to come back as the engine cools down!
Do them both, but I would lean to radiator cap, There's air in there now so "burp it" anyway

The low coolant sensor is on the right side of the radiator just below the radiator cap. Check to see if the wire has come off the sensor or if the connector requires cleaning.
I'm confident the cooling system will dispell air into the overflow tank after a good run, and there should be no need to bleed anything.
