That data is not stored in the CalPac; it's only kept in volatild RAM and so is lost whenever you remove power from the ECM.
You can use a scan tool, like AutoXray, to scan or monitor (it has two modes) engine operations as well as to retrieve stored trouble codes.

the reason why i ask is i took out my stock prom and sent it to jesse ski-down-it he is going to make me a custom prom taylored to my motor, he said when he gets my prom he will have a look at it and see what's going on so i'm just wondering how you do that.??

Well your "chip" contains fuel tables, timing tables, TC on/off setpoint and such data.
So I think he meant he'll have a look to see what the current setpoints and parameters are.
