The facts:
'89 gets driven a few times a month. Last brake service was 3-4 years
ago.
Car was recently put into daily driver service without a single problem
for several months.
The problem:
After riding over rough highway for extended period, breaks became
spongy on first press, traveling roughly 50% to the floor. Second press
was firm and immediate.
Problem was suggested to be Master Cylinder, and was similar to problem
12 years ago.
Replaced Master Cylinder.
Bled Brakes until fluid was clean. (Old fluid was pretty black).
Problem resolved for 2 days, and has now returned:

Sounds like there is air in the system, that's why it builds. The rough/bumpy road might have something to do with it but. Either they didn't bleed all of the air out or you have a leak. Otherwise it wouldn't build like that.

Did you get a new or reman master cylinder. Also did you pre bleed the m/c before you installed it?? If not, you might have scored the rubbers and caused an internal leak. Get another m/c and try again. Chances are you might have gotten a defective one.. It happens..
Also check for leaks in the calipers and if your flex lines might be weak and ballooning when you apply the brakes.
