I've spent months trying to find the real source of this problem and I think I've finally got it fixed. What was happening was that the low coolant light would come on intermittently, yet when I would check the coolant level after it cooled off, it was OK. I "packed" it a few times, but the light would come on after driving it a while. It would never overheat, though. I found a heater hose connection that seemed loose, but no change. All was well, as far as the coolant level when cold and the temp while running... it was just that the light kept coming on. It seemed like the sensor was working properly, though.
Finally, one day I could smell coolant after driving a while and popped the hood... I could see just a bit of coolant on the manifold near the thermostat housing... the engine hadn't gotten so hot as to burn it off, yet. So, I replaced the gasket and sealed it up, good.
The reason I even mention all this is that it was tough to find because the coolant would get boiled off when the engine got good and hot, making for very little evidence of a leak. It would only leak when they cooling system built up enough pressure, and the leak was a one of the highest points in the system, so not much coolant was ever lost (just enough for the light to come on from time to time). I would "pack" the system by adding water just after the thermostat opened, and within 5 miles, the low coolant light would be on again; yet, I couldn't spot the leak.

Awhile back I was very slowly losing coolant and could never find the leak. One day I opened the hood after driving home and saw a drop of coolant fall on the left exhaust pipe and disappear in a puff of steam. New head gasket fixed it!
