Default Poor idle

I have a 90 vette with a ZZ4 engine. Lately my idle has been very out of control. I moved from Minnesota to Arizona and not sure if the altitude effects this or what the deal is, but my car has 3 idle speeds that come in and out. It will idle at almost 2000RPM, 750 RPM, or die with out me giving it gas. Some times when I first start it, it idles fine and then after I drive it for a bit on the open road and get to a stop sign or city traffic, the idle stays at 2000 RPM. Some times it is 180 of this where it idles 2000 RPM when first started and after it warms up (not talking 30 to 40 seconds warm up, I mean 15 to 30 minutes) the idle drops down to 750 or so. Twice now the idle went from the 750, after it heated up, to not maintaining idle at all, the car would shut off on me if I didn't give it gas myself.

Is the idle a software/computer deal? How do I try to dial in my idle? What is the best temp to dial in idle? Hot or cold (I'm in arizona so to me its always hot now..... ) Thanks for the help.

The idle speeds are programmed into the computer. YOU don't dial it in without reprogramming. With everything working properly, the sensors will compensate for altitude and weather changes. Are there any codes set?
