Z06 wanted was at 250 degrees at the end of the 1/4 and I was at 175 without Methanol at 18psi boost. Your car wouldn't have caught on fire. If your maggie is intercooled, you might want to check to make sure the pump is working and flowing in the proper direction, the reservoir is full and the heat exchanger is free of debris. If it's not intercooled, then the IAT's may be in line.

after a 20 minute session on the road course hitting 145+ lap after lap the highest IAT I recorded was 165 for a few seconds. Average temp according to EFILive was 122.
Livernois Motorsports tells me that IAT sensors go bad a lot. I'm replacing mine today but other than feel from the go pedal I have no way of knowing if it was bad........

Correct. Once you heat something up over and over and over again and the it cools over and over and over again. It becomes brittle and eventually will break.

Well, I pulled the sensor out today and it was definately damaged.
It actually looked kinda MELTED. I know that the sensor should not get hot enough to melt but the protective cage around the tip is GONE
I test drove it with the new sensor but really couln't tell any SOP difference. Gonna have to call Dr Phil one of these days and get the IAT's looked at.
