How realistic is it for someone 5' tall to drive a 6 speed C5? How close would the driver be to the airbag on the steering wheel? Are any C5s made with adjustable pedals? Im thinking about a C5, but the wife is only 5' tall and she wont go for a C5 if she cant drive it. My main requirement is it has to be a 6 speed so I hope it isnt a deal breaker.
If you get a C5 with the sport seats I'm almost positive she'll be able to drive it. The seats move every-which-way including up, so visibility shouldn't be an issue. And I'm sure she'll be able to reach the pedals.

No adjustable pedals and haven't heard of any aftermarket conversions. Best way to tell if she will be able to drive one without being too close to the airbag is just go try it. The sport seats have a wide range of adjustment, so maybe there is a good setting for her.
I had posted a thread a week or so ago about my wife having some issues driving it. With some suggestions we got the seat adjusted properly. She was not totally comfortable driving it but she was able to do it. Tell her it will be fine.
I'm 5' 2" (and probably rounder than your wife!) with a manual shift, I can drive it just fine, but I feel like I'm sitting on top of the steering wheel, can't really stretch out my arms. Automatic just wasn't an option and those clutch pedal extenders are just plain ugly! I'd be happier at 5'4" but that isn't going to happen
