I have a 98 coupe and according to the gauge it us running at 200 to 220 degrees. Is this "normal"? Should I change the T-stat?

this is normal, and yes ou can change it if you like. I changed mine and noticed a huge improvment in consistencies at the drag strip.

If you will run your A/C it will cause both fans to run thereby keeping your temp 190-210. If not running A/C your fans don't come on until around 230 degrees.
