are you talking about having a silid roof? or just a hatch with a bubble window? i know a company goes from Z06 to coupe, but why would you want to go backwards? the coups is more areodynamic

Though I would not want a conversion like it, I gotta say that is ONE SWEET job of custom fabrication....Looks perfect. Awsome work.....I am impressed....
Coupe to FRC, try dismanteling yard for parts.....and start R&Ring parts...Shouldn't be anywhere as hard as the custom job above.

Just curious as to whether anyone has seen the speedster conversion done in person. The red one posted above looks pretty good, but the one on the ebay page is hard to tell b/c the rest of the car looks like a C5R. Anyone with any insight into this?

It certainly can be done. It just takes parts, time, money, skill, and, personal tenacity. As you have been advised, GB Vette has accomplished this via a convertible. In fact, this body style is the most popular foundational platform for this mod. Caravaggio also performs this modification. But, at quite a pice tag.
For further references, do check the Covette and Corvette Fever Magazines archives. There, you will find references and pictures of not only the Caravaggio conversion, but, of also another individual with a Torch Red convertible that also did a targa/vert conversion similar to GB Vette, by purchasing at a dismantler the targa top roof and convertible deck lid housing, and, molding it himself (an auto body tech).
Moreover, the picture of the Torch Red C5 coupe posted by fellow member "Crooze" up above, has installed the well known C5 West C5 targa roof lid conversion. This product has been out for over several years, and, is now (since 2004) sold by Corvette America (part #43793) for $995 plus shipping. This C5 targa conversion is a take-off of the targa roof conversion that was available for the C4 via Greenwood in the 1980's. Enjoy.
