Depends. MN6 and hard acceleration requires hand on shifter until 3rd gear. I have a 4.10 rear and the shifts come very quickly. Then at 10&2 until 4th. Cruising - 10&2 unless a shift is needed - then back to 10&2. Leisurely driving with the woman in my life - one hand on the woman and the other on the wheel. Have to release the woman when shifting.
You will notic professional drivers always have both hands on the wheel. I remember a quote from Jackie Stewart, who was at the time the formula 1 racing champion. He stated that he always had both hands on the wheel --never resting on the gearshift. His reasoning was that it only takes a second to move your hand to the shifter when necessary -- but you never know when you will need both hands on the wheel for an emergency manuever. I have always tried to emulate that philosophy.

Teach your woman to leisurely shift for you. This leaves a hand free for signalling and whatever ...

10 and 2 except while relaxing. I used to leave one hand on the shifter until I read that I could be damaging the 6sp by putting even slight pressure on the shifter. I try not to do that any more but it is a hard habit to break.
Not long after buying my C5 (which I'm the 2nd owner of) the 3rd/4th gear sychros went out. After a full T56 rebuild under warranty, the service tech told me the shifter fork "pads" were pretty much worn away and thus helped prematurely destroy the synchros. He said "letting your hand rest on the shifter while cruising can led to excessive wear on shifter fork pads."
