Just stick it in the gear you want - I had a 2000 auto, & just drove it like a stick when I went out to play in the twisties. Drove the car that way for 43K miles, never any problem.
I think you are talking about COMPETATIVE DRIVING MODE. In order to do this you must.....
1. Have the active handling on
2. Put your parking break on
2. Hold down the active handling button and do not release. It will take a second and your display will read COMPETATIVE or COMPETITION i forget.
If for some reason that does not work try the same steps but start with the active handling off.

He might not even have Active Handling. It come out as an option in LATE 98. RPO code for A/H is JL4.
No sport mode or button on the C5 but my '98 Grand Prix GTP had that button that was called "Performance Shift" and it worked extremely well. It was a much quicker car then the '02 GP GTP I replace it with. Kind of wished I still had it as a daily driver. Even the torque management was minimal compared to the '02! I understand the PS was dropped in the GP after '99.
