I have notice that with any of the installs I have seen pictures of that the exhausts with the Quad Tips (any particular brand) are installed with the tips lined up next to each other so that the exhaust plate cannot be seen or the tips spread out from the middle so the exhaust plate can show.
Is there room for adjustment for this to happen or am I just looking at them all wrong.
I like the quads, but don't want to block my exhaust plate when I install them.

This is not an adjustment, some are designed to leave space in the middle, others are meant to go together. I believe only the Corsa Tiger Sharks and the SLP Loudmouths are the only quad tip systems that meet in the middle. I like the look but then I went with the stingers for the sound...
I like my ark exhaust, it has a good sound and the quality is great for the price. But if you want a built in exhaust plate, then get the magnaflow there are allot pictures of the exhaust on the forum, if you do a search.
From what your describing you want to look at Stinger quad tips, GHL or
Corsa Pro tips. I have Corsa Tigershark which are, what they are. The
only adjusting you do is that needed to line them up!

All the catback exhausts that I have seen are not adjustable in terms of the spacing of the tips. Some brands just have a bigger opening between the left/right sides than others.
