I've never heard of anyone driving off the end, since they do have a stop, low as it is. I would still imagine most Corvette owners have a spotter and one foot on the brake. I know I do.
I bought mine at Wally World for $19.95. I also made a pre-ramp so I wouldn't rub my chin spoiler in preperation for my Tiger Shark front end.
If you fear driving off the end of the ramps, jack the rear of the car in the center and place the ramps under the wheels. The front; just take it slow and you will know when you are up all of the way. If you overshoot it a bit, they ramps will slide a bit.
I bought a kwiklift to do away with rmaps completely.

Just to say it is possible, my dad did this with his caddy. The ramps were much steeper than the Rhino's most people use from autozone. He did NOT have a spotter and the ramps did not have a lip at the end like the Rhino's either. My buddy in his WRX and no driving ability cam up on them pretty quick and hit the stop. They just slid forward on the floor about 4" and scared the $hit out of me as I was on the other side of the ram

Make sure you get the Gray ones if you go with Rhino ramps. They are wider than the black set...
And no... You should not be able to drive of the edge. Just make sure you DO NOT gas the car once you're up on the flat part of the ramp. There is a lip on the end to help prevent you from doing so... but if you reeeeeeally want to... make sure there is nothing in front of your path.
I wouldn't know what to say about someone who can actually drive over the edge.
I use the Rhino ramps on my non-lowered C5. I bought some cheap rubber mats at Anderson's to place under the ramps so they don't slide at all.
Mike Mercury's ramp plans are nice...I am tempted to make them someday too.

How did you make the pre-ramp? Got any instructions?
To keep from driving off the ramps just get a hand mirror, put the side window down, hold the mirror out so you can see how far your wheels have gone on the ramp.
