I got my 99 vette about 18 moths ago. Replaced my '88 IROC I had been driving for 12 years. I had three requirments: 1 RED, 2 6spd, 3 HUD. And that is exactly what I got. As a bonus I even got active handling. The HUD has kept my out of trouble with the law (knock on wood). My next car will have it. The HUD can be turned off with a click of the switch if not wanted. Somewhere on the forum guys have installed HUDs post production. Seems like deep surgery to me.
In shopping arround and not buying the first vette I fell in love with I ended up with a cleaner car with half the miles (25K instead of 50K) and it only cost about $600 more. I think I did well. Mine is stock and a daily driver. If you are going to modify yours as it sounds like, you are well justified to saving the money and putting it in the mod.
