Can I move from the stock 245/45/17 to 255/40/17 and from 275/40/18 to 285/35/18 without screwing up the handing? Will that little additional rubber matter? Any issues?

Nitto makes 255/40/17 and 285/35/18. They fit and look great.
And, as I mentioned previously on many posts regarding Plus Tire Sizing, so does the Falken Tire Company (Falken Beta FK-451's). This specific model tire is a great alternative low cost value on top of being a nicer Plus 0 sizing upgrade from stock. Good luck to you.
