Not a thing wrong with a stock C5 - they can be a pleasure to drive. I just can't seem to keep mine stock though.
Stock they are so smooth and refined. You can forget how fast you can make them go when stock because of the smoothness. That's why after modding my Z, I installed some DynaMat. I believe that's what C6 folks are experiencing. The C6 is more "refined" than the C5 and some folks mistake that for a lack of "performance".
And to be honest, sometimes our back yard engineering conflicts with the original design of the car and we create all sorts of "issues" the engineers spent much time and money getting "right".
I have many personal vehicles and the C5 is the only one thats modified. When I get into the other vehicles I notice the exact same thing you are talking about. How quiet they are, how smooth the ride is and how little effort it takes to drive them.
The C5 is a special car that only goes out when I have specific needs in mind... otherwise it just sits and waits for that next mod or spin around the block (or 100 blocks for that matter) at warp speed.
Wow, I know exactly what you mean. As much fun as it is driving my car, there are times where I will choose to drive my fiance's Hyundai Elanta to run errands over the beast. I think my next car will be a Porsche 996TT, GT3, or E46M3- just something that I can leave (relatively) stock and still have have a blast with.
