Anybody else think they get an awful lot of glare and reflections off the dash on their C5? Mine is really annoying. I've cleaned the windshield, inside and out, and the dash, more than on any car I've ever owned, but this is annoying and distracting.
I'm thinking it's because of the steep angle of the windshield, and the fairly long depth of the top side of the dash.

Quite a bit
I was making the mistake of using gloss dash cleaner which made it much worse. there are some products that dry to a dull finish that may help.
buy a pair of polorized sunglasses with anti glare coating on them and you wont see it....
Very, very true.
And stop cleaning your dash! Just wipe it with a damp cloth to get the dust off. The shinier it is, the more it's going to reflect. Keep it dark and dull.

That's all I am using, a damp cloth. My dash is black.
On a side note, I saw somebody above mentioned Armorall. DO NOT use that on your interior! I used it on a dash on another car I had and the vinyl came loose from the substrate all around the edges. When I asked about it at the dealer, the first thing they asked was if I was using Armorall. They said that can cause it.

I was afraid all the good looking women won't be able to see me due to the glare. Now you want me to wear dark glasses yet. They'll never recognize me!

Armoral is a water based product. It tends to leave a film... then dry rotting, cracking, headaches, etc... if you don't keep on top of it. I avoid that product at all times.

I'll be the devil's advocate here. I've used Armoral for over 30 years and have never had any problems at all. Other's have said that the dashes will crack and such with Armoral. I disagree. Most say have you used Armoral because for years there wasn't anything else on the market that did what Armoral does. So they could sound as though they knew what they were talking about and sell you something else. I have had motorcycle seats for 20 years and they have had nothing but Armoral and they are in excellent shape. There is my .02 When I use it on my dash I use a micro fiber towel to clean it off and that gets ride of the shinny surface and it looks great.
Armol is good if you stay on top of it. For us lazier types that don't get a chance to take care of our equipment but every so often, it's not a good product.

I have to agree as I've been using Armoral since it first hit the shelves way back when. The only problem area was when installing wood dash kits, the Armoral had to be THOROUGHLY cleaned off or the adhesive would not always hold.
Get polarized sunglasses. They are not as dark as other types of glasses but the glare will totally disappear when you wear them. That's what I do to alleviate the glare problem.

That's all I have ever used on mine and the glare seems to be pretty much of a non-issue.
Try a dash mat; they eliminate the glare. They don't look great, but you can put it on for your drive and take it off if you want to show the car. Most of the ones I've seen (at least for the C3 and C4) use velcro to keep them in place.
