I wouldnt even think about keeping the top off if i was gone more than an hour somewhere. Rather be safe than finding a wet or greasy present in the car. I have a coupe but thought id give my 2cents.
the targa is off our 2002 coupe from May thru November (except for washing ).
I'll leave the Vette in a lot - but put the windows up - if it's longer than an hour. I bought the Window Commander (pre-cursor to the Window Valet) making the raising and lowering of the windows effortless.
If its gona be outa my site for more then a few min. I'll put it up and only latcg the drivers side. With a window valet it makes life very simple.
You just open the windows on the way back reach in unlatch and put it down. Takes less than 30sec.

At shows I'll leave it down all day. Never had a problem at a show
Someone told me taking the top in and out can wear out the pivot points fast and maybe even cause creases to appear faster....so I usualy leave my top either down or up. Few weekends back someone threw a half full strawberry shake in my drivers side seat just to be a @ick.....dont let it happen to you.....LOCK IT UP!
