You might be able to play with the microphone's sensitivity? Alternatively, you may even want to plug in a mike and wire it somewhere where you could hear conversation (assuming you have an instructor or the such) but not wind noise...
On my motorcycle(lots of wind noise) I use a piece of foam held down with velcro, but you could use tape. You will need to experiment a little depending on your camera and mounting location. On my bike it works great, just the right amount of engine and wind noise. I can talk(yell) and it picks that up really well too, but the camera is mounted on my gas tank and my head is right above it.
