I would also recommend purchasing the Photoshop software. It really enhances the pics by allowing you not only to crop, but adjust brightness, color, saturation, etc. If you're going to be using the new camera alot it will really help since the lighting and composition are rarely just right. The camera doesn't always capture what the eye sees.

Right now I am using JASC Paint Shop Pro 5, which seems to do the job. I am not ready to spend ~$600 on Photoshop just yet.
Playing around in the JASC software has allowed me to adjust the photos like you mentioned, it's amazing what can be done.
The wife an I got into digital (Nikon D100) a couple of years ago and we'll never go back to film. She has progresses quite a bit from when she first started both w/the Nikon and Photoshop Elements 3.0.
Suggest you check out a local Art/Cultural Center in your area for some good digital photography classes. Maybe a Junior College or a photo studio in your area will have some short classes to show you some tips and tricks in using the camera features.
One important point that my wife noted from her classes and talking w/the pros was this: strive to take the best initial pic using lighting and camera features. Use your software for minimal t/u.
