I would go with 18" or 19" CCW wheels. They are top notch wheels and their customer service is excellent. For tires I would go with the Michelin Pilot Sport II's.

CCW and Iforged are very good wheels if you don't mind spending some cash. Crays are a less expensive alternative. There are a number of good tires out there, including Goodyear GS-D3's, Michelin Pilot Sports, BFG KDWs, and Firestone Wide Ovals.

You hit most of the real quality tires and on the rims if you are on a budget there are plenty of knock offs available, I have had no issue with my C6 Z06 Hyperblack rims You will get 1000 different opinions and they are like butt holes on the rims, get ones you like on your car and some of those quality tires listed above

Thanks for the help... Why do away with the run flats? What if you do get a flat?

There is a gazillion page wheels thread in C5 Gen or Z06. Check it out, I think it is titles Show Us Your Wheels or something like that. Just about every option under the sun is represented in there.
