Default Tire sizes
I was just wondering what is the biggest reasonable size tire I can get to fit on the stock c5 Y2K rims?

I take it you mean width and not height? If so I would not go larger than a 285, more than that you will get a pretty large sidewall buldge and handling will be affected and you will also loose contact area.

I was thinking of going with a 285/35 on the rear and a 255/40 on the front

The stock wheels on a C6 are 18/19 with tire sizes of 245/40/18 and 285/35/19.

+10mm in width over stock is fine.

Rear is fine, but that front is pretty short. You may want to go with a 265/40/17
