[Z06] Z16 hood, do they all do this

Mine does this too, pretty badly at high speed. It has been so bad on mine that I have considered installing external hood pins to keep it in place - cause it's damn scary sometimes cruising down the highway with the hood lifting off...
I was told by somebody that it's common the Z06's cause they allow too much air under the hood with the cut-outs up front and it creates a pressure zone under the front of the car.
I can't beleive this isn't a more common concern...

try removing the driver's side plastic cove blockoff behind the front wheel. with it removed, it will vent air from the engine bay.
you can remove the passenger side, but it's sealed off by the battery surround, whereas the driver's side has a free shot to the engine bay.
it's also completely reversable if it does nothing to improve the situation.
i've had mine off for years to help with heat extraction.

Your front end is lifting. It looks like you may have lowered your car and now have a negative rake. At those speeds, with proper rake, you should be getting significant downforce on your car and it should be squatting down with air pushing down on the nose and hood. These cars are sensitive to rake and the rear, at the jacking points, should be higher than the front. FWIW.

Rake is the first thing to check, a ZO6 should not have the light front end issue of the cars of 20 years ago.

Those CF hoods are really floppy. I went with a buddy of mine to pick up one (Z16) in south GA, on the ride back I looked in my mirror and saw a huge gap on the left side of his, it had just popped loose going down the hwy, still latched. Very odd.
Also I'm suprised GM didn't use revalved hood struts with the lighter hood. It's got so much less load on them when the hood is up, when you go to close it you feel like you're going to bend the hood in half.
The hood on my 01 flops around a good bit at speed at track events (140+) so I imagine the CF one does it even more.

I think you are right on the goofy side vent chromy looking things, they do absolutely nothing but reduce air flow out of the engine bay.

Houston...I think you have a problem...maybe it's just me but I don't think that's suppose to happen. Can you imagine the force on the hinges? I'd check and recheck the hood/hinges and how things line up. The air should flow over the hood, not under...and excess air in the engine compartment should flow out the side vents...maybe those goofy silver things on the side vets are blocking the air flow from exiting; or is that a reflection? 158 MPH, impressive but this car was engineered to do in the 170's. I'm sure M/T, Road and Track would've shown us all a picture like this had their test drive resulted like this.

I just recently had my z up to 157 and it didn't do this, but I have a vararam blocking off the front vents so I don't get as much air flow under the hood, and my seals are 2 inches short on each side in the back to allow some airflow through them.
