Unless you have very specific mod plans, and plenty of money, you should buy a car that is already "done" the way you want it, or at least close. There are a TON of used C5s for sale with exactly the mods you plan.
As to Z06 vs. coupe/vert, just pick what you want. The Z is higher priced and that makes up for the difference in spec.
For a daily driver I think a coupe is much more practical than the other two. The "trunk" is huge.

I bought the c5 vert 6 speed magnetic red2. Personally to me the best looking corvettes are the c8, 63 to 67, then the c5. I prefer a quieter ride, which means sound Insulation and thicker glass. But buy what you like, it's your car.. good luck.
