When I start my 99 i get high oil temp warning and then it goes away and the display shows around 300. Slowly the temp drops down to normal and reads fine while driving. After I turn off the engine and wait for a few minutes and turn the key on for the display the same thing happens. I replace the sensor and nothing changed.
If it's not the sensor then it's likely the connector/wiring. Just to be clear, the sensor is the one the plugs into the oil pan, not the pressure sensor above the filter.
If you have an ohm meter, measure the impedance of the sensor when cold and compare it to the chart in the service manual - or post it here and someone should be able to confirm that it's within proper range. If it is then you need to test out the wiring harness and connectors to verify there's no short/open/corrosion. Corrosion in the connector could cause inaccurate readings.

Without reviewing my service manual, I am pretty sure you're looking at the wrong sensor. The one above the oil filter is the oil pressure sensor. The oil temp sensor is attached on the oil pan.

The EOP is on the rear of the engine up top behind the manifold. The EOT is the one by the oil filter and the Oil level sensor is on the pan.
