You can paint the calipers when on the car - you just have to carefully tape off all the areas that you don't want the paint on. I painted mine off the car, but it was done when the car was in the shop anyway so no additional down time for me.

I used Folia Tec caliper paint - it has been on the calipers for over 6 years and still looks great.
