Long thread on this last year. Bottom line is, it does not appear to be possible. Even the Pontiacs that have used HUD for years, have the same color display as the Vettes, even though all of their other gauges are red.

You can see the red part in the center where I covered the display with a red video camera filter. The text still comes out a greenish white, now with a tiny bit of red thrown into the mix.
And yes, my computer is in a record player
