I don't think 2 years is too long to go before changing the oil if there's still a high % (meaning over 65-75%) remaining on the OLM at the end of 1 year. I wouldn't go more than 2 years however, and probably change the filter at the 1 year mark just to have a fresh filter on doing its job for the second year. I think the 1 year requirement is overblown when the OLM says otherwise.
The filter doesn't need to be changed if you're doing 2 year intervals. I've been doing two year intervals on my mom's 2001 VW Golf since she only drives 3-4k per year and I keep the same filter on there. The VW oil filter even says right on it "30,000km or two years". I always get the used oil analyzed and it shows the two year interval is perfectly safe.

The shelf life of fresh synthetic oil is 5 years.
But given how little yo appear to be driving your Vette, I suspect you have fairly high moisture levels in the oil. It's TBN number (its ability to neutralize acids produced in the combsuiton process is still high(given so little usage), But personally at 1 year old I would change it.

I mostly use it to go down the shore so the weekend run is between 250 and 300 miles or to visit friends in Somers Conn. and thet is a 4 hr drive each way so I think I a getting the oil hot enough.
Yea, ignore the DIC You guys crack me up... yea GM wasted time & money programming the algorithm and setting up the DIC oil monitor because they felt like it. Please.
Follow the DIC, it's there for a reason, or change once a year as the little book that came with the car says to do. I tend to believe what the manufacturer says..since they "manufactured" the car, rather than myths or popular opinion of what is on a public forum
