Asa daily driver, I would think 160 is too cold. The engine really needs to get hot once and a while to burn off condensation and prevent sludge build-up. I plan on a 180 change with mine before summer.

Yes, if you drive it often in the colder temps, a 180 is a better idea.
I have a 160, and even in 40* ambient temps, no problem getting oil temp over 200. Coolant temp normally runs 176-178 when moving. Fans are set to come on at 195 and cool it down to 185.
My car is stored for winter though, and cold weather operation isn't a concern.
