So I just changed all the hoses on my 2000 coupe and am following the service manuals instructions for replacing the coolant but... it says to get the car up to 210 degrees while reving the engine to 3000 rpm at 30 second intervals but it won't get past 185 degrees. I have a 160 thermostat installed if that matters. Is 185 good enough or what should I do?

the object of this exercise is to be sure the t'stat is open and passing coolant. it appears you have accomplished it. keep an eye on the coolant reservoir.
Sounds like the fans are coming on. You could unplug the fans and let the temp come up to 210. Doesn't matter what thermostat you have without air moving through the radiator its not going to cool much.
