Try filling the tank to a higher level and make sure the tank is level in the car too. That bolt that's underneath is in a slotted hole and will allow for some up/down adjustment if needed.
Parking on inclines has been a known cause too, especially if the coolant level is off a bit. Don't worry about being married to that "Full Cold" mark.
I keep mine full up to just below the "grid" in the filler opening.

In my '98 T/A the level sensor was in the radiator, not the expansion tank. It also got gummed up and indicated improperly. I unhooked the sensor cable from it and moved on.
I had the same problem last night. Painted the coolant tank and put it back in and had the light come on twice then go out. Hope this thing stays out. Does any one know if you can just replace the sensor or do you have to replace the entire tank?
Well I had to replace my tank because to leaks and the new tank didn't come with a sensor so I removed my old one which never read low before and as soon as I started the car up after the install the DIC read "low coolant" and will now throw any codes but will constantly come up.

Seems like I read recently on the forum that the sensor needs to be in the correct orientation to work properly. I can’t remember what way now though. Wide side horizontal or vertical or something like that.
Since you didn't mention whether the coolant was, in fact, lower
than it should be....do you have a leaking radiator...a common problem with older Vettes.

very true I did not mention that the leven has been at the full line from the beginning with no leaks
