Install is a snap. Check out www.corvettepartz.com. I have their pedals and like the look, which is identical to the stock brake and clutch pedal. You can't go wrong with CCA or Elite engineering though, if you prefer that style!
Depends a little on which manufactures product you decide to buy. Most will have installations instructions included or online.
The gas pedals are all installed the same. If you're young, slender, flexible and can get between the seat the kick panel, installing it isn't hard. A mirror will help. Don't install the spring back onto the lever until the pedal is secured with the fastener. That makes it a little easier.
As far as the dead pedal, ELITE ENGINEERING has (had?) two styles, one uses fasteners to attach to the oem plastic dead pedal. The other uses double sided tape. I have the latter and it's held up for almost three years w/o issues. It's simple to install it as the plastic dead pedal doesn't have to be removed, just cleaned with alcohol.

Here is a cut from the 2002 GM Corvette Accessories catalogue. They were available with or without the logo. The boxes they came in say Classic Design Concepts LLC. The last place I saw them was in the West Coast Corvettes catalogue a couple of years ago.
