Often when I start the car with the A/C, the air stinks for some time. I know it's from the water left in the evaporator when the A/C is turned off. I try to turn off the A/C a few minutes before I stop the car and turn it off. I guess the prior owner did not . I understand to clean the evaporator is a lot of work and expense. Is there any easy ways to try and clean it???

The inlet air duct is located at the base of your windshield. Make sure you put air conditioner on "outside air" not re-circulation. I have used these in other cars, they work.
Also check the drain tube in the engine compartment to make sure it is draining, white gunk will partially block the drain allowing extra water to remain in the bottom of the pan. Once a year I do the utters and the AC drain just to be safe.

How do you get to the tube. Is is under the car, or in the engine compartment.

Odors can develope in the A/C system when a fungus has grown on the evaporator core. Warm damp surroundings provided the perfect breeding ground for fungus, which grows with moisture. Aerosol disinfectants can be used to remedy this condition. While the A/C system is running on the full high setting with recirculation feature activated, spray a disinfectant (Lysol, Ozium) into the inlet of the A/C system (usually under the dash on the passenger's side), but be aware whatever you spray will come out of the upper vents, so you may not want your face in front of any vents when doing this procedure. Odors can be prevented from returning by repeating this procedure periodically throughout the summer months.
