Do coil overs from Phadt replace the transverse leaf spring setup? Please forgive my ignorance.

yes, with the installation of coil overs the leaf spring will be removed!

Default How about sway bars?

Another nub question: With installation of the PFADT coilovers (and therefore removal of the transverse leaf spring), is it necessary or suggested to install the thicker PFADT sway bars (especially for use on the racetrack) in order to prevent body roll?

According to your profile, you have an 02 Z, which allready has a
sway that is more H/D than the average C/5, but the Pfadt,would be a better unit.

I suggest talking to Pfadt dealer (I use Steve@RSD) when it comes to which sway bars to use, it depends on the type of driving. A bigger sway bar isnt always better.
