You remove the shocks & springs.
You replace the removed parts with the coil overs.
If you go to the Pfadt website they have the pictured instructions, from start to finish.
When doing the install & you run into a problem or have a question, you can call & talk to a person there at the Pfadt shop that will be able to answer any & all your questions.

What advantage are you getting from adding coil-overs to a Vette? I thought you could lower the car with the stock suspension. Are you just looking for stiffer springs and different shock dampening?
The LG coilovers were one of the best things I did to my Z06.. I was looking to lower my ride, improve handling and keep the ride damping to my liking. I have ridden in many vehicles that have been lowered and they just beat me up with the ride. I can say the LG coilovers have exceeded my exceptions from handling and ride comfort. There are bias opinions about them but I have been very impressed by them for my use. I also did the install on my own. It was not easy but very self rewarding. I used not only the directions from LG Motorsports Instructions but from Toque, scroll down to LG's GT2 Coil Over Install C5 Z06:

You are adding several things, Dampening adjustment, ride height adjustment separate from coil rebound, and overall more ride adjustment. The adjustability of coilovers really is hard to beat in that you can make it ride as stiff or as soft as you want and have it high our as low as you want(obviously within reason). It will feel like an entirely different car once you install coilovers and in the best possible way.

They told me to just lower the car on the bolts and I would be fine. I do like being able to adjust dampening on my car, but if I go too soft I can get some rubbing during extreme handling.

If you're concerned about extreme handling, then coilovers are a huge improvement over just "lowering the car on bolts." Before I put my Pfadt coilovers on, my Z would hop side to side over bumps in turns (we have crappy roads here in WI). Scared the *crap* out of me. With coilovers, that's gone, and so are many other little annoyances. Unless you race, you probably won't get a huge benefit from installing coilovers, but you will notice a better, more "confident" ride with them, even during regular street driving. At least I did... Just my opinion, of course.

To give you a good idea of what gets replaced you can look at our install documents. We don't have an install document prepared for our new coilover system, the FeatherLight Generations Single Adustables quite yet, but you will get a great idea of what's involved by looking at the instructions for our FeatherLight Generations Double Adjustables.

Go anything lower than what the factory bolts will allow, which is about 3/4", and your ride and handling will suffer...mainly due to the shocks bottoming out into the bump stops because you've elimintaed your shock travel. Many do this, and learn the hard way that they must go to coilovers.
I'm lowered on stock bolts (no cut bushings or any of that BS) and I'm happy with the stance...any lower and I'd scrape just about everything and never get in my driveway. Added Bilstein Sports and it was very noticable difference in ride quality.
