This really depends on how long you're going to be in it IMO. I live in a small town where most speed limits are 35-45. I may go 50-55 and stay in 5th as there are too many stoplights in a city setting.
If I'm out on a country road or something and the speed limit is 45 and I'm going to go 50 I'll put it in 6th if I'm going to cruise at that speed for awhile.
About 50-55mph if I'm just cruising in my lane taking it easy. If I'm in traffic, changing lanes and trying to get somewhere I leave it in 5th so I don't feel like I'm lugging the car around.
According to the owners manual 6th gear can be used at 40 MPH and above. If you are going to use it at 40 MPH you should be on level ground and not accelerating very fast.
If your car is STOCK (no cam etc) it will easily pull 6th gear @ 800 to 1000RPM. I routinely run 6th in cruise control at an indicated 1000rpm/40mph, and in doing so, improved my mileage from 16 to 18mpg

Usually 60mph or more. I don't like the exhaust note at lower MPH's it sounds like it's droning. Plus I live in SoCal so no long open distances here, there's suually traffic.
mine isn't a z06. but the ratios are the same if I don't plan to accelerate at all about 45, if i have a sharp turn i have to downshift to 5th so where i am that's usually every mile or so if there is any traffic. i usually shift to 6th over 60 Mph.

Our gear ratios are different than yours in every gear except 4th, unless you have a MN12 swap.
