Well, to be quite frank, neither are what I prefer. If I'm "preferring" it would be a C6Z with bolt action, red or black with black guts. Unfotunately, the stick I'm currently swinging isn't that big yet, so I'm looking for my first Vette to tide me over for awhile. With that being said, I know I am going to be selling it later down the road and am trying to come up with what I feel is the better bang for the buck. The Z more closely aligns with what I want long term, but is a bit more than what I initially wanted to spend for a short term fix. I started out with a mindset of buying a 12-14k cash car, and if I go the Z I'll end up financing a little of it. And as someone mentioned a few responses ago, I'm also battling the "want " of the extra from the Z with the knowledge of the background of the coupe, as the folks selling it kept great records and just had it ran through Corvettes of Houston where it passed with flying colors.
So, therein lies my little dilemma!
No dilemma at all. You do not want an automatic and you don't want to blow $19K yet on a Vette.
If you live near Houston additional used C5's will pop up every week. Wait for a 6 speed, 2001 or newer, with about 50K miles, for sale by owner, for $12K or so. It is worth waiting a few weeks to avoid the slushbox AND the dealer markup. Even if you will only own this one for a couple years, waiting a month or so to get pretty much what you want makes more sense than financing the Z or driving something you will not be that satisfied with...
Well, it has all been craziness this past week or so. Went and drove the Z, and it just wasn't in the shape I would expect, just looked like it told a story of someone not taking care of it the way I would. Called the guy up with the 2000 coupe, was going to go the next day to pick it up, but was told if I couldn't make it that evening then he was selling to someone else - well, my tee-ball team season end party was that evening, so my kids were more important than a car and he couldn't understand that. Then, this past weekend, my wife had to have emergency surgery, so I now get to swallow a $5k deductible plus co-insurance. I had pretty much made my mind up that the good lord was trying to tell me I didn't need a toy...
Well I was in the hospital room bored to desth while she was sleeping, so was perusing Craigslist on my phone and found one that may still work with the cash I have left now. 2002 coupe with 107k miles, for $11,500. Certainly more miles than I wanted, but at that number I figure I really can't go too wrong. And yes it is a clean title. Supposed to go check it out this weekend, will let y'all know.

Be patient. If it looks good and has complete service records you are off to a great start. Sounds like your are focusing on the most important stuff, but it can be hard to deal with that itch unless you scratch it. Good luck.
