My door panels, like many others, are de-laminating. I'm considering letting Dennis at DD redo my door panels but I'm concerned that the leather will not match the rest of the interior.

Why not speak with Dennis on this? He can tell you how close of a match it would have to your existing interior. I visited Dennis' shop back in August and he had a completed door panel there at the time - excellent quality work and worth the money IMO.
If you have OEM seats, the new leather will probably not match exactly. However, if you go with aftermarket leather seats, you can possibly ask for additional leather so that it matches perfectly.
I had Dennis supply me with some black leather door panels that matched his black double din 1/2 wrap radio bezel leather, however if you have custom colors, it might be a little more tricky.
I've seen members completely retro-fit their interior with leather door panels, dashboards, etc., and my only question is over the long term and whether or not the leather will be able to fight off the UV rays and take the normal wear/tear abuse that the automotive vinyl does.
I personally like the look of my OEM vinyl dashboard and the nice satin sheen that I currently maintain with the 303 Aeropsace product. Leather can be scratched and how well it looks will be determined by how much abuse it is subjected to.
