Price of the fluids alone should only be around $100-150 and that's for oil, coolant, transmission, and differential. Not sure if "complete fluid change" includes brake fluid. If you were to get all these things done separately it shouldn't be more than $300-400. If the shop is doing it all at the same time while it's on a lift it should cut the labor time significantly.
I would turn and run if I were you.
Heck, if you were local I would do the fluid change for you in my driveway on jack stands for the cost of beer and pizza.

$150 should get you all of the above fluids including brake fluid (for brakes and clutch) and a hand pump.
My C5 turned 7 years old last year, so my local club sponsoring dealership performed the following for $500:
- Oil Change/Filter
- Engine Coolant System Flush
- Brake Fluid System Flush
- Power Steering Fluid Flush
- Checked all hoses/gaskets
- Replaced wiper blades
- Installed my DSV steering wheel
I had performed all of the fluid maintenance myself up to that point and since I didn't want to mess with the airbag during the steering wheel swap, I had them replace all the fluids.
A local Pennzoil shop did my tranny, diff, radiator, brake and oil all for around $130. I used a $10 off coupon from their site. Very reputable shop. All the guys in the bay are gear heads and took extra precautions. Even covered my windshield up.

Wow, you work cheap! I left my '97 with a buddy in Los Angeles and the shift from 1st to 2nd is a bit rough so I offered to buy his family dinner if he does the swap instead of bringing it to a shop.
Last winter I did the complete fluids swap myself. Car had only 21k miles at the time. The cost of the fluids plus a hand pump, oil and air filter was $202. The fluids were all OEM from a dealership except the trans which was Amsoil and Mobil 1 oil and Mobil 1 filter on sale from Advance Auto.
This year, I did them all again except the coolant. Wanted to see what was going on after driving the car (only) 3k miles since last year.
Bottom line: oil changes of course are a no-brainer. Diff, trans, and brake fluids came out looking like new - put a drop of the old and new side-by-side on a white paper towel and you can't see a difference.
Clutch fluid (DOT-3) clear but slightly darker than new. Power steering the same.
