So the next question is this cam is part of a cam package that a company sales. I don't think I could tell them to change the numbers on the cam. So should I just call comp cams and tell them the numbers I want and let them custom grind it and then find all the other parts myself?
There are lots of proven cams out there that will meet your goals. I think a few phone calls to some reputable shops could source you one easily. You don't need a huge cam if it is spec-ed out correctly...

I think EG probably uses a proprietary lobe that Comp won't grind for you.
Give PatG a call. I have two cars with cams he spec'ed and no complaints for either.
Vengeance racing is very close to you. Call those guys and get their advice or whoever will be doing the tuning.

Because in the end if the tuner isn't familiar with the cam, then NO it will not be a good street cam.

That all depends on the tuner, I daily a car with a T-Rex, which is a mid/upper 240s duration cam over .600 lift, this is comparable grind, though the mayhem II has a newer/better lobe design.
I have no trouble in stop and go traffic, no bucking unless below 1500 and even then it is predictable and manageable. A tuner worth his salt can tame the wilder grinds and make them streetable.
Do you have gears? I would recommend at least 3.90 or above for a cam in that range. I would also be prepared to change valve springs more often. I am about to put in a fresh set dual springs ( have close to 20K miles on current golds).
I have have the mayhem 2 cam in my 02 z06. i have i/h/e and heads as well. I don't daily my car, but drive it a few times a week and don't think its too big or hard to drive with. As long as you get a good tune you should be fine. Pulls very hard throughout the power band. I made 471whp with this setup. I don't think you will regret it
