The only thing I have used has been a moist cloth with mild dishwashing soap (followed by another moist cloth with just clean water and then a clean dry cloth). I have not used any kind of protectant on the dash or doors. For the seats, steering wheel, shift boot/**** and e-brake handle and boot, I use Mequires leather conditioner wipes.

Meguiar's makes some good stuff. I use it on pretty much all of my interior.
Aerospace 303 Wipes used here. I use a damp cloth on the steering wheel except for the airbage center of the wheel. I'm using the small Calif Duster on the dash & seats to keep up with the dust.

Lemon Pledge on the dash/doors, sprayed onto the mini-California Car Duster sparingly, Lexol on the leather bits. I don't really need to do much for the carpet other than vacuum, but if it needs it, I use Tuff Stuff.

Filtered water on the entire interior with Microfiber towels (since it was new)
Never been a fan of the "gloss" looking interior panels from all the chemical cleaners out there.
