I called to schedule an appointment to get my oil changed at my dealer. I have 7200 miles on my 2001 Z06. They mentioned to me that there is a 7k mile service due. I told them that sound awful early for anything other than oil changes, and they said it was up to me. I have had great luck with this dealer and don't think they would be trying to screw me.
Is there a 7k mile service that needs to be done? If so what does it consist of?

Why don't you ask them specifically what they want to do? I would not just let them do a generic 7k service. I do not remember seeing any 7k service requirements in the shop manual.
The person who makes appointments (non-mechanic) didn't know what the 7k mile service was comprised of. And there was no service advisor or mechanic available at the time, so she took a message. I can't find my owners manual, probably because my wife hid it when cleaning.
But, a service advisor finanlly called me back. He said that the "7k mile service" is just oil change, check tire pressure, check air filter, check washer fluid level, etc... Which is what they do everytime they change the oil anyway. He said the person scheduling the appointment shouldn't have called it a "7k mile service", they should have said oil change.
