Running with the C7
The C7 has certainly improved, all around, as a machine. On a road course, nothing less than a modded C5Z will stand with a C7 Z51. That's not to say that those of us out there with REALLY modded C5Z's won't still be able to hand out an *** whipping or two...or ten.
I think what should be extracted is, the C7 is an outstanding evolution of technology and capability. To improve on something so good...like the C5Z, the C6Z...it's impressive to say the least, but they are doing it. Just don't expect HUGE leaps an bounds...the cars are too good already. The beauty of the situation is, the Corvette is so good, that C5's can still hold their on on the street, as well as the road course, with just a few aftermarket pieces.
Cliffs notes: Whether it be C5, C6 or C7...GM did a hell of job building a truly capable sports car. Even at 11 years old...my C5 can hand out an *** whipping to mostly anything on the street....C7 included. You have GM to thank for that. YOU DEFINITELY have Corvette Racing to thank for that.

Also, not to pick on your words, but those of us with modded C5's may disagree with your choice of words in "nothing less than a modded C5Z will stand with a C7 Z51." Point being, if the C5 is heavily modded in all areas then it makes no difference if it was originally a C5Z or C5.
Who the heck would pay an extra 35-50k when they could either order or just wait a couple months for things to simmer down?
