I purchased my 2004 LeMans Coupe last April. It had 19,800 miles on it and was/is in perfect condition. The previous owner had installed the ZO6 titanium exhaust. After negotiations, my price was $22,500. This happened in Albuquerque, NM. Hope this helps!
The interior is called shale and there's a lot of unknowns like tire age and condition, history, etc. If the car is in a condition matching the low miles and has no issues, I think $25K is a good middle range. I sold an 03 Anniv edition convertible this spring for $27.5K with 19,000 miles. I'd price it at $27K and see what happens. If you're in a hurry to sell, you may have to lower it a little.

Starting at $27K is good - you can always lower it a bit but hard to go up on the asking price once listed.
NADA is at $28,000, so all of the previous posts are pretty spot on.
