My heads up display shows up crazy low . Even when I adjust it up and down my head still has to be touching the ceiling to see it . Any suggestions ? New projector or can I adjust it some other way?

the issue may be that its a "heads up display" not an "over head display". In a vette your head will always be near the ceiling. The display will never be over your head.
More seriously i can see mine fine from any line of sight that i can achieve in the car. so i would suspect somethign is out of wack if you cant adjust it to a decent spot.
Yes it's a heads up display, yes it will always be low. It's not supposed to show up in the middle of the windshield but down lower.
That said, if it's way too low then the question is, does the height adjuster work at all? If adjusting it up and down isn't working it could well be that the posts that stick out the side and hold the unit could be worn and has let the unit sink.
Somewhere in one of the FAQs post on the site is a description of that and a link to how to fix it.

Thanks, can the HUD be removed from the dashboard by itself?
My understanding is that if it's OEM installed then no but if it's installed after then there are several installation options and one of them is just to cut into the dashboard without having to remove the dashboard.
